The Torajan tribe in South Sulawesi maintains a traditional lifestyle with boat-shaped houses. This region features humid rice paddies and towering rock walls. Coffee is grown at elevations up to 2000 MASL, one of Indonesia's highest. Recently, producers with small farms have formed community micro-mills to enhance processing. At these mills, they sort, depulp, ferment, wash, and dry coffee parchment on patios. This wet-hulling process, known as Giling Basah, produces a unique bluish bean and an Indonesian flavor profile. Local groups partner with exporters like Indokom to tackle logistical issues, providing milling facilities, improving traceability, and increasing producer earnings through direct trade.
