Cooperativa Regional de Agricultores Orgánicos de la Sierra (RAOS), founded in 1997, is Honduras' first cooperative of small and medium organic coffee producers, with 270 members. Many are pioneers in organic farming, while others are new-generation producers from established organic farms. They have created ecologically run micro-mills using demucilagers that conserve water and control mucilage without fermentation. RAOS operates two collective wet-mills where 80 percent of members deliver cherry, also utilizing this sustainable technology. Additionally, RAOS has invested in enhancing its dry mill facilities.
